This was really tasty and had a nice spice to it. I could imagine toasting a slice of this to have in the morning with breakfast, or as a substitute for corn bread with chili or another Spanish-style dish.

Ingredients:
4 oz bacon (approximately 4 thick slices)
3 large jalapeños (NOTE FROM BEVERLY: try 1 or 2 first if you’re pepper-shy)
6 large eggs
1/2 Cup ghee, melted
1 Tbsp ghee to grease your baking pan
1/2 Cup coconut flour
1/2 tsp sea salt
1/4 tsp baking soda
1/4 Cup water

Method:
Preheat your oven to 400ºF, and while it preheats, slice your jalapeños and set on a baking tray with your slices of bacon. Once preheated, roast for 10 minutes total, flipping bacon and jalapeño slices midway. Allow to cool slightly, and deseed the jalapeño slices. (NOTE FROM BEVERLY: wash hands thoroughly after touching jalapeno slices and seeds. They will BURN your eyes and lips if you touch them).

Place jalapeños and bacon into your food processor, and pulse thoroughly.
In a large bowl, mix together eggs, water, and ghee, and then sift in your coconut flour, sea salt, and baking soda. Fold the bacon-jalapeño mixture into the batter.
Grease baking dish with the tablespoon of ghee, and add batter. Bake at 375ºF for 40-45 minutes, until a toothpick can be cleanly inserted and removed. This bread is delicious, but as it is very heavy on egg, it is best to keep refrigerated for storing if it doesn’t all get eaten in one sitting”.

Here’s another note from Beverly…. This could BE breakfast, with all these eggs and bacon. Maybe serve with veggies such as green beans or a nice salad and you’re good to go! Any other thoughts on pairing this with a vegetable?

What to protect your children’s brains, and reduce the possibility of Parkinson’s and Alzheimer’s? Check out this list of the “worst” and “best ” produce offenders from Environmental Working Group. The foods listed below are the ones to buy organically-grown when you can.

Keep in mind that in addition to pesticides (for the bugs), conventionally grown produce has a variety of herbicides (for the weeds) and fungicides (for mildew) as well. After years of spraying, the ground becomes saturated with these chemicals which pass into the roots and then into the food. Several items on the list contained pesticides phased out in the 1970′s and 1980′s which still linger in the dirt.

Watch out for jams, cereals, juice, dried fruit, salad, and herb teas containing the “Dirty Dozen” as well. These hidden foods may be your worst offenders.

Children are more susceptible to pesticide effects than adults, as pesticides work by interfering with the brain and nervous system. (Have you seen a roach die after being sprayed with Raid? It twitches and jumps as the chemicals disrupt its nervous system). Sad to say, there have been no advanced studies on the effects of multiple food chemicals on developing brains. And few studies on the effects of single chemicals either….

Humans and pets can develop a wide variety of neurological problems from pesticides in food or sprayed on the lawn. Any lawn that has cats, dogs or barefoot children running on it, will infuse chemicals into the skin. It’s hard to resist, but running barefoot on lush park lawns may not be a great idea.

Parkinson’s, MS, ALS, Alzheimers’s, seizures, liver problems, insomnia, headaches, behavioral problems and tremors are just a few disorders initiated or aggravated by pesticides. I urge any client with Parkinson’s to strictly avoid spraying for bugs in the home too, and to buy organic produce as a basic ground rule.

This list of the top 10 pesticided foods comes from the Environmental Working Group, a non-profit that researches chemicals in food, water, skin care and much more. You can search their home website at www.ewg.org for more info.

TOP 10 PESTICIDED FOODS IN ORDER OF SEVERITY:

#1 (worst) peach

#2 apple
#3 peppers
#4 celery

#5 strawberries

#6 cherries
#7 kale and lettuce
#8 carrots
#9 pears
#10 imported grapes (check the label of origin)

Runners-up for the “Bad List”: Cherry Tomato; cucumber; spinach; summer squash; blueberries.

The cleanest foods are: onion, avocado, broccoli, pineapple, asparagus, peas, mushrooms, cabbage, watermelon, tomato and sweet potatoes. For the most part, foods with a skin, shell or husk retain the least pesticides internally. Waxes seem to be fairly benign, but they do make it more difficult to wash pesticides off. I use warm water and a good vegetable cleaning spray on all conventional produce with wax. Peeling the food will also help, but will not remove the chemicals absorbed by the produce from sprays and the dirt itself.

Ingredients:
¾ of a head of raw cauliflower, riced; or 2 cups riced and packed
2 eggs
salt and pepper to taste
Instructions:
Preheat oven to 375 and line a baking tray with parchment paper.
For these I actually rice my cauliflower slightly more fine than cauliflower rice. Put into food processor ¾ a head of raw cauliflower, cut up and most of the stem removed, and pulse until you get a texture slightly finer than rice. (Once it’s riced, measure it to make sure you have 2 cups packed.)

Place in bowl and microwave for 2 minutes and stir, then another two minutes and stir again then place in a dish towel or nutmilk bag and squeeze excess water out as hard as you can. (You’re going to want to get out as much water as you can and be careful not to burn yourself because it’s going to be very hot.) If you want to avoid the microwave, try steaming it lightly (already riced) before squeezing dry.
Place drained cauliflower back in bowl and add two eggs, salt and pepper and mix until well combined.
As a note it will be a little bit runny but shouldn’t be pure liquid either. Spread mixture onto a baking sheet into 6 small fairly flat circles.
Place in the oven for 10 minutes then carefully peel them off the parchment and flip them and place back in the oven for 5-7 more minutes.
Once they’re done place them on a wire rack to cool slightly.
Heat a medium sized pan over medium heat and place the tortillas into the pan pressing down slightly and brown them to your liking. (Don’t skip this step because it gives them slightly crispy on the edges and gives them a wonderfully nutty taste).
Serves 6-7.

About the Chef:

“My name is Joshua Weissman. I was born and raised in California and I currently live in Texas. As this may come as a shock to some of you I am currently 17 years old. I love my family more than anything in the world. And if it wasn’t for the constant love and support of my amazing parents I would be nothing and wouldn’t have been able to do what I did. Ever since I was a little kid I have had this immense passion for cooking. But sadly as I got older my health began to decline and I began to have serious problems with my health but my love for food remained strong! But not for the better. I struggled and struggled with my problems and got constantly ridiculed and made fun of because of the weight. I was bullied, shunned from groups and a lot of the times physically harassed.

So one day I had enough. I was simply fed up with the ridicule, feeling sick, and unattractive. So I began eating healthy and learning more and more about health and started re-exploring my love for food. Yes believe it or not you can be a food lover and still be healthy! After a grueling and back breaking year and a half I managed to lose over 100 pounds. Now at the age of 17 I am healthy, fit, happy, and still have a love for food strong enough to part the seas. So please stick around and be ready to have some fun. I’m really excited to see what people have to say so don’t be afraid to post comments and email me if you have any questions, comments or even arguments!” SlimPalate.com

The 4 main neurotransmitters including Dopamine and the “forgotten neurotransmitter GABA”

How gluten exposure affects your neurotransmitters (brain function, happiness, brain fog, ability to concentrate, feel calmness)

Why you may be suffering from a neurotransmitter deficiency

Pick any one or more of those choices, and get motivated to stay off foods that provoke an immune response. We call these intolerances, not allergies, as there is no allergic reaction (such as Hives). Instead we get a series of digestive, inflammatory, immune and neurological events that can cause dozens of mental or physical symptoms.

Eating foods you are intolerant to is, in my opinion, the number one CHOSEN cause of poor health, along with bad food choices in general. You have the power to say no, to make other food arrangements and to learn to take care of yourself in a better way. Your spouse is not in charge of your food choices! Nor is your addictive mind. (Here’s my Podcast on Reflux and Indigestion for more).

Here’s an ultra-brief summary of the two main “trouble” foods and some known reactive symptoms. Wheat and/or gluten: diarrhea, bloating, constipation, depression, alcoholism, eczema, dementia, emotional instability, rage, colon cancer, irritable bowel, brain inflammation, fibromyalgia, and all autoimmune, neurological and autism spectrum disorders.

Dairy: sinus/ear infections, allergies, snoring, heart disease, arthritis, bloating, gas, loose stool, heartburn/reflux, recurring colds, stomach aches and all autoimmune and autism spectrum disorders. (Here’s my blog post on Snoring you might enjoy)

A well-performed Food Challenge lets you see what effects foods may really be having on you. Sometimes “small” things become invisible when our lives are so full of stress or busy-ness. Focusing on one food group at a time gives you clarity.

HERE’S HOW TO DO A FOOD CHALLENGE:

1). Select ONE food family, and stay off it 100% for a month (at least). I highly recommend a Dairy challenge where ALL dairy except GHEE is eliminated, including whey and butter. Ghee contains zero protein (unlike butter and cream) and therefore the immune system cannot attack it. (The immune system’s job is to identify foreign proteins and attack them).

2). Notice throughout the month any symptom that seems to disappear. With Dairy, watch especially for reflux, arthritis pain, bloating, gas and sinus issues. And ear infections and tummy aches for the kids. With gluten, ANY symptom is possible but gut issues are often the most visible.

3). Now challenge the food to see what happens. Eat a significant serving once or twice daily during the Challenge.

Here’s the order to test Dairy, allowing at least 4 -7 days on each group: first butter; then heavy cream; then firm cheese such as Cheddar or Gouda. Many people can make it this far without seeing old symptoms come back, or new symptoms begin. Next to challenge are THE FOODS MOST PEOPLE REACT TO: yogurt; soft cheese such as Feta and Cream Cheese; ice cream; and milk (raw or organic).

I find that 90% of people cannot tolerate the second group once they have avoided it properly for 1 to 6 months. The intolerance reaction can be strong, or weak, but bottom line is ANY REACTION TELLS YOU TO AVOID ALL FOODS IN THAT GROUP.

4). Try this with the next food group, such as EGGS, Nightshades, other grains and pseudo-grains, chocolate, nuts, alcohol, etc.

5). Celebrate “flunking” a test, as you just changed the inflammatory response level in your entire body. Permanently!

6). Occasionally repeat the food challenge. By doing this, I found that I can eat about 6 eggs a year, widely spaced. Any more than that and I get gallbladder problems including neck pain, headaches and rib pain. Please see my website for more info on all these topics. Thanks!

I’m a Texas girl, and every Spring we get to shovel piles of oak tree “tassels” off the lawn and driveway. These dangling strands are the male flower, offering pollen to the winds for delivery to a friendly female tree.

The question came to me as I was shoveling – WHY is there so much pollen? This got me thinking about the evolution of plants, and how the natural world has been affected by time and by modern conditions. Similar to our human evolution…

Every species had to figure out the best way to reproduce Enough baby trees have to grow to prevent competitor trees from taking over. And the competitor trees are trying to outwit their neighbor trees at the same time. Survival of the fittest in action.

In the case of our winter-pollinating Mountain Cedar, man has affected the volume of pollen here in central Texas and Oklahoma. Literally tons of pollen overwhelm us in the winter months, causing weeks of communal sniffing, sneezing and “allergy days” off work. But WHY so much pollen?

When settlers first came here, they found large cedar trees with fragrant wood full of cedar oil to sell. These trees were large, old growth Cedars with single trunks, deep roots and lower levels of pollen. As hundreds of thousands of trees were cut down, a different species of cedar took over, one with multiple trunks, shallow roots, and many more small pollinating branches.

Grass fires kept cedar trees under control too, as fire would kill the cedar but would merely burn off grass stems, encouraging new green shoots to emerge. The final blow came from multitudes of domestic grazing animals, with different hooves than native bison. Cattle, sheep and goats eat grass and other foliage to the ground, and the cedar takes hold quickly Bison would nip the grass, and turn the ground with their hooves, creating healthier terrain. Erosion sets in and cedar takes the opportunity to take over.

What’s the message for Humans? Our natural balance of microbes, once disturbed, allows opportunistic species to take hold. To restore health, we have to remove the invaders, replace them with better species, and provide them with a better approximation of the terrain they require. Taking probiotics without first changing the diet (and all those fermenting starches) is like throwing grass seeds on top of eroded soil covered with cedar trees. The whole system has to be healed and balanced, and yes it takes time and patience. And money.

As a practitioner, this is by far my biggest frustration in trying to help others…. You’ve got to give it time, pay attention, invest in yourself and don’t give up. Don’t expect large permanent results from small, short-term efforts. Getting to the core of the issue is the best way to treat it. It’s a process that’s faster for some than others, and considerably more expensive for some than others. But the alternative? A week in ICU with some crisis or other; an emergency surgery; a tumor that has to be monitored. These things cost more than all the food and therapies I can recommend.

As the noted researcher Louis Pasteur reportedly said on his deathbed, recanting the “germ theory of disease” for which he was famous; “C’est le terrain qui est tout!” The TERRAIN – it’s everything!
