Cauliflower Tortillas!

Cauliflower TortillasThis recipe, and the chef who created it, really inspire me!  He’s 17, and lost 100 pounds by creating and cooking a healthy new diet.  Read his story below and check out his site at SlimPalate.com.  He swears these replace his beloved tortillas just fine and don’t taste “eggy”!  What do you think?

Ingredients:
¾ of a head of raw cauliflower, riced; or 2 cups riced and packed
2 eggs
salt and pepper to taste
Instructions:
Preheat oven to 375 and line a baking tray with parchment paper.
For these I actually rice my cauliflower slightly more fine than cauliflower rice. Put into food processor ¾ a head of raw cauliflower, cut up and most of the stem removed, and pulse until you get a texture slightly finer than rice. (Once it’s riced, measure it to make sure you have 2 cups packed.)

Puzzling Over Pollen, Evolution and Survival of the Fittest

Heritage OakI’m a Texas girl, and every Spring we get to shovel piles of oak tree “tassels” off the lawn and driveway.  These dangling strands are the male flower, offering pollen to the winds for delivery to a friendly female tree.

The question came to me as I was shoveling – WHY is there so much pollen?  This got me thinking about the evolution of plants, and how the natural world has been affected by time and by modern conditions.  Similar to our human evolution…

Every species had to figure out the best way to reproduce  Enough baby trees have to grow to prevent competitor trees from taking over.  And the competitor trees are trying to outwit their neighbor trees at the same time.  Survival of the fittest in action.
