Pumpkin Spice Muffins – Grain Free

6 pastured eggs
½ cup melted butter or ghee (or coconut oil)
1 tsp vanilla extract
½ cup pumpkin puree (See below for how to make home-made)
¼ cup maple syrup or honey
½ cup coconut flour
½ tsp baking powder
1 ½ tsp cinnamon
¼ tsp allspice
¼ tsp cardamom
¼ tsp sea salt

Preheat oven to 400 degrees F.

In a medium bowl, beat eggs with all wet ingredients. In a separate bowl, mix together the dry ingredients. Incorporate the wet and dry ingredients and ladle into 11 or 12 muffin cups. Use silicone cups for non-stick.

Tropical Chicken Salad

This has an explosion of flavors and textures in your mouth!  The creaminess of the avocado…the crunchiness of the celery and pecans…the moistness of the chicken thigh…the crispness of the apple…the sweetness of the mango.  It’s great on it’s own, or put on a fresh bed of greens with a tomato slice.  It can also be served at a party in endive boats.

Ultimate Meatballs

1 lb ground beef, pasture-fed or organic
1/3 cup almond meal
2 pastured or organic eggs
4 oz baby bella mushrooms
1 stalk of celery
1 carrot, peeled
1 bunch of scallions, the bottom third (the onion portion and a section of the greens)
1T dried parsley
1 tsp salt
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1.5 cups of marinara sauce, heated.  (Prepared from scratch, or buy organic with no added sugar or corn syrup).
2T fresh basil, chopped for garnish  (use 1 1/2 tsp. dried basil if fresh is unavailable)

Cavegirl Roast Chicken and Broth

1 whole free-range chicken
2 Tb. Olive oil
Organic orange or apple
Organic lemon or lime
Herbes de Provence (or preferred chicken rub/herbs)
Sea salt, ground pepper
1/2 onion
3-4 garlic cloves
1/2 cup filtered water

Pre-heat oven to 350 degrees.

Rinse chicken and remove any innards. Give your bird an olive oil massage (inside and out) with the olive oil. Season liberally with salt, pepper and preferred seasonings/rub.
