This easy coconut oil fudge is fast and tasty. It’s loaded with healthy coconut oil that’s easy to digest and good for your metabolism. I have served this at parties and people always ask for the recipe. When they hear there are only 5 ingredients (and no cooking) it’s a rush to write it down.
Gluten free, sugar free, dairy free. Give it a try but lock it up so it doesn’t disappear all at once.
This recipe makes thin squares of fudge. If you want thicker pieces, double the recipe.
Here’s all you need:
Easy Coconut Oil Fudge
1). Have an 8 x 4 loaf pan lined with parchment paper or perhaps plastic wrap so you can lift the fudge out.
2). Gently melt 1 cup good quality coconut oil. Don’t use refined or processed oil.
3). Pour the oil into a medium-sized bowl.
4). Add 1/3 Cup Honey (I prefer raw honey).
5). Shake and add 1/3 Cup Canned Full Fat Coconut Milk. You want creamy, full-fat, non-refrigerated coconut milk without added gums as thickeners. If you search Amazon for “coconut milk gum free” you’ll find Nature’s Forest, Aroy-D and Nature’s Greatest in cans or aseptic packages. There are hundreds of great Paleo and Keto recipes using this type of coconut milk so buy in quantity.
6). Cacao Powder is not the same as Cocoa Powder which is more heavily processed and may have added ingredients. You want plain raw Cacao Powder which is rich in antioxidants. Add 1/3 Cup to the bowl. Here’s the difference if you want to know more.
7). Add 2 tsps. real Vanilla Extract (not Vanilla Flavoring with sugar and “flavors”) and a bit of fine ground salt. Mix everything well and pour into your loaf pan.
8). Freeze or refrigerate. It will turn hard so you can cut it up to serve. It will melt if you put it outside on a hot day. Store it in the fridge until ready to serve.
OPTIONS: Add some walnuts or other nuts to the mixture or on top, about 1/3 Cup. Double the recipe for thicker coconut oil fudge.
