This is one of my favorite topics. How to be gluten free starts with a change in diet then we find other sources we need to remove.
We can eliminate gluten from our diets with some good detective work, but other surprising sources of gluten may be important for you to know.
Especially if you have Celiac Disease, like I do, or make gluten antibodies, which I believe we all do to some extent. In any event, I feel all my clients do better when they avoid starchy cereal grains that we only began to eat with the introduction of Agriculture some 12,000 years ago.
